I've never had the pleasure of setting up a SATA drive in Fedora, so I can't really help you there but...
-Have the ISOs already burned to disk. The anaconda Linux installer is very user friendly.

-You will need to use the WINE emulator unless there is a linux port of UT (doubtful). In which case it may or may not run. WINE is pretty good with basic apps, but I haven't personally tried any games.
